Diet or no diet some days just call for milk and cookies! I will have to take an extra-long walk tomorrow but these cookies really hit the spot. A touch of sweet with a combination of healthy options, these are the perfect after school treat or a late night snack.
- 1/2 cup soft butter
- 1/2 cup olive oil
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 1/4 cup wheat flour
- 2 1/4 cup quick oatmeal
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup raisins
- 1/3 cup milled flax seeds
- 1/3 almond slices
- 1 cup dark chocolate chips
- Beat sugars and butter until smooth.
- Slowly add olive oil and beat until fluffy.
- Add eggs and vanilla and beat one minute.
- Measure oatmeal in food processor and grind until it a fine powder.
- Sift oatmeal, flour, salt, baking soda and baking powder in a separate bowl.
- Stir flour into butter mixture until well combined.
- Stir in nuts and fruit.
- Drop by teaspoons on lightly greased baking sheet.
- Bake at 350 for 9-10 minutes.
- Makes 4 dozen
