I am not much of a chocolate lover and can pass up just about anything with chocolate in it…but put a sugar cookie under my nose and I lose all will power!  This weekend while looking for a quick and simple recipe I could make quickly to take to a church breakfast; I found this great sugar cookie recipe.   I didn’t have a couple of the items so I had to change up the recipe some but I was so happy with the results I just had to share it.

I know my Dad loves the Christmas cutout cookies my Mom puts back for him without frosting so I know he will love this cookie. They are not cut out’s but drop cookies but they have such a light and airy texture they just melt in your mouth.  I actually had a few with a cup of coffee this morning for breakfast!  Not a wonderful healthy breakfast but it sure was worth it!

1/2 cup sugar

1/2 cup powder sugar

1/2 cup soft unsalted butter

1 egg

1/2 teaspoon vanilla

2 1/4 cups flour (I used unbleached flour)

1/2 teaspoon soda

1/2 teaspoon cream of tarter

1/4 teaspoon salt

1/2 cup oil

1/2 finely chopped pecans or walnuts (optional)…I didn’t have any nuts so I left this out this time

350 for 10 minutes

Cream butter and sugars until creamy, add egg and vanilla and mix well.  Sift together flour, salt, cream of tarter and soda.   Alternate flour mixture and oil in creamed mixture and stir until smooth.  Drop teaspoon size on cookie sheet and flatten with glass dipped in sugar.
