Cool Summer Jello Peach Pie.
In the south, nothing speaks summer more than peach juice dripping down your arm. And nothing soothes a hot South Carolina day than a slice of this cool summertime jello peach pie. Just like the title says…this is not your Grandma’s peach pie, it is much better!
Now don’t get me wrong, I love a slice of good old-fashion peach pie, but this cold pie really hits the spot for a summertime dessert.
Peach season always starts with a trip to Cotton Hope Farms, a local peach orchard, where I buy two boxes of their seconds. I know when I buy them I will have to let them sit and ripen for a few days, and I have come up with a great process for ripening peaches. So after a few days of ripening they are perfect to preserve and to make this pie. This peach pie works the best with very ripe peaches, the softer the peaches the tastier pie.
I hope you enjoy this pie as much as my family does. So pour a glass of southern sweet tea, find a shady spot and savor the taste of summer in this jello peach pie.
- 1 1/2 quarts sliced ripe peaches
- 1 1/2 cups water
- 3/4 sugar
- 2 tablespoon clear-jel
- 3-oz package peach jello
- 1 cup whipped topping
- 1 9" deep dish baked pie shell
- Wash and peel fresh ripe peaches. Layer in cooled baked pie shell.
- Combine water, sugar, clear-jel and peach jello in a saucepan and bring to a boil, stirring constantly until thickened.
- Pour jello mixture over peaches. Chill until firm.
- Top with whipped topping and serve.
