An unexpected SC snow day made the perfect backdrop to create a new cookie recipe.  With a warm fire and a hot cup of tea the mixing bowls came out. I usually can come up with something with whatever I have in my pantry, and today it was chocolate chips and dried cranberries that made for this sweet afternoon treat. 

Double Chocolate Cranberry Cookies

Ingredients
  1. 1 cup all purpose flour
  2. 1/3 cup unsweetened cocoa
  3. 1/2 teaspoon baking powder
  4. 1/4 teaspoon baking soda
  5. 1/4 teaspoon salt
  6. 1 cup sugar
  7. 1/3 cup soften unsalted butter
  8. 1 large egg
  9. 2/3 cup dried cranberries
  10. 2/3 cup dark chocolate morsels
Instructions
  1. Preheat oven to 350.
  2. Combine flour, cocoa, baking powder, baking soda and salt in a bowl and mix well. Place sugar and butter in bowl and beat until creamy. Add egg and vanilla; beat well. On low speed gradually add flour to creamed mixture. Beat until just combined. Fold in chocolate morsels and dried cranberries.
  3. Spray cookie sheet and drop by tablespoons, two inches apart. Bake at 350 for 10 to 12 minutes.
