My hubby’s job is one that he has a hard time stopping for lunch and by the time he gets home from work he is very hungry so my job today was to find a healthy snack he could throw in his pocket to curb his afternoon hunger.
I have a favorite go-to granola bar recipe but I didn’t have everything I needed in the house so I was off to find a new recipe. After searching the Internet I didn’t find one that I had everything the recipe called for so off to my pantry to create my own with what I had.
Having made granola bars in the past I knew that every recipe required a few core items.
- A base
- A binding agent
- And lots of filler
After going through my pantry I pulled out everything that could be considered a good choice for granola bars and compared what I had to a few recipes I found on the Internet and put together some basic measurements to get started.
Here is what I came up with and as we are now sampling the results I am pleased.
- 2 1/2 cups oatmeal (quick oats)
- 2/3 oat bran
- 1 t salt
- 1/2 t cinnamon
- 2 t vanilla
- 1/2 cup honey
- 1 stick melted butter
- 2/3 cups peanut butter
- 3 T corn syrup
Mix all the above ingredients until well blended.
Mix in 5 cups of assorted fillers. Be creative and use whatever you like or have in your pantry. Today I used, chocolate chips, raisins, slivered almonds and walnuts. Any dried fruit, nuts, chocolate chips and even coconut will work.
Generously butter a 9×13 pan and press firmly into pan. Bake at 350 for 30 minutes. Cool completely before cutting and wrapping individually.
