I love Sunday’s and I really love a good hearty muffin! I am not much of a pancake and egg breakfast kinda person but give me a good muffin and I am in heaven. This morning I was determined to make a recipe that would be slightly sweet and good for you as well.

I am so excited my first try worked so I just had to share the recipe with you all. Now I just have to find a name for them…maybe you all can help me name them.

Here is the recipe I created:

1 1/2 cup water
1 1/2 cup one minute oatmeal
1/2 stick butter
1 small banana (mashed)
2 eggs
1/2 cup honey
1 teaspoon salt
1 teaspoon cinnamon
1 1/4 teaspoon baking soda
1 cup whole wheat flour
1 1/2 teaspoon vanilla
1 cup raisins or dried cranberries
1/2 cup chopped walnuts or pecans

Preheat oven to 325°. Boil water. Turn off heat and add oatmeal. Stir in and melt butter and let cool. Add remaining ingredients. Mix well. Bake in greased muffin tin for 20 minutes at 325°.

Now if I can find a name for them…how about “Sunday Honey Wheat Muffins?”
